Cacao Cherry Fudge

This has been a busy weekend with our Exceptional Expectations conference, my daughter in for a visit and friends from Michigan staying with me. With all of these activities, I missed blogging yesterday, but still managed to find time to tamper with my new creation, Cacao Cherry Fudge today. I served them at our Young Living meeting at my house tonight and this is all that is left. They were enjoyed by all.

Full of protein rich foods, raw superfoods and yummy flavor, these fudge squares pack a healthy punch.

Maca powder can be found in most health food stores or coops. Maca powder is rich in Vitamins B, C, and E, is known to aid PMS and menopausal issues, promotes healthy libido, increases energy and is high in iron.

Chia seeds add a bit of crunch to the fudge, but they also add high amounts of protein, manganese, and healthy omega-3 fats. They are helpful for diabetics as they slow digestion, stabilize blood sugar, help detoxify the colon, boost energy, and lower cholesterol.

It seems to me that with all these health benefits, you might not expect this fudge to be delicious, but I think it is. Give it a try and let me know what you think.

Cacao Cherry Fudge
2 Tbsp maca powder
3 Tbsp raw cacao powder
4 Tbsp coconut oil, warmed
2 Tbsp raw, organic agave nectar
1 Tbsp chia seeds
2 Tbsp raw, dried coconut
2 Tbsp chopped nuts (almonds, pecans, or cashews)
2 Tbsp chopped, dried unsweetened cherries
2 drops YL peppermint essential oil

Combine powders and mix, pressing out any lumps. Add oil, agave and blend well. Add remaining ingredients and stir to mix. Pour into an 8X8 square pan lined with parchment or waxed paper. Smooth out and put in freezer to harden. In about 30 minutes, cut into squares and store in freezer or refrigerator until ready to eat.

Options:

  • Add YL orange or tangerine essential oil in place of the peppermint oil.  
  • Add YL cinnamon bark essential oil and 1 tsp cinnamon powder in place of peppermint. 
  • Substitute other dried fruits in place of the cherries.
  • Be creative and invent your own flavor. Then share it with all of us.
